//Orange Beet Juice

I got brave and tried out my beets from our CSA share this week.  Here’s what I did:

  • 1 Beet, peeled and quartered (I only peeled mine because it had quite a bit of dirt that didn’t want to come off!)
  • 1/4 cup orange juice concentrate
  • 1 orange, peeled
  • 1/4 cup blueberries
  • 1/4 cup water

Blend till there are no more pieces of beet.  Chill for 10 minutes and enjoy!

My kids tried this and liked it! They said it smelled like dirt, but they were really glad it didn’t taste like dirt! 🙂  I agreed with them!  The smell was quite earthy, but it tasted nothing like the smell!

I do have to ask though if anyone knows how to make this more smooth? We use a Blendtec (like a VitaMix) and I want it more “juice-like.”  It was more like a smoothie.  Any suggestions?  Maybe I’ll try more water next time!

Get brave, buy a beet this week and try it out.  Let me know what you think!  We blended ours but you could also juice yours. We don’t own a juicer.  BTW, this picture doesn’t even do the juice justice.  Like I mentioned the other day, sadly I’ve never eaten a beet before so I had no idea they were really such a beautiful pinky, purple color.  The juice turned out to be the coolest color I’ve ever seen!

  • My favorite Juice recipe (I blend it in a blender because after 2 moves I don’t know where the juicer is stored)
    handful of parsley, 3 leaves of Kale, 1/2 Granny Smith apple, 1/2 lemon, 1 inch of ginger, 1/2 small beet, 1 stalk of celery, 1/3 of a cucumber, 1 carrot, (sometimes I add 1/3 of a pear, 1/3 of a gala apple, romaine lettuce, or other greens), [ most of the time I add 2 TB Instant Soy Protein Shaklee, 2 TB Performance]. My sister who is not fond of vegetables thought she might be able to consume more vegetables this way.] Enjoy!!!
