This original recipe  shaped up in my kitchen the other day after playing around with my original HealthyOates Protein Bar recipe.  One of my favorite cookies as a little girl with the Hershey’s Peanut Butter Blossoms recipe.   That recipe is neither healthy nor helping me keep my shape, so I decided to create a tasty version that would offer some healthy benefits!  My “Butter Blossoms” aren’t loaded with butter and bad fat.  Choose the nut or seed butter of  your choice and load them up with healthy proteins and omegas, and oats – all good for heart health.  With the Shaklee 180 protein I choose to use, you can eat these and know you are even telling your body to build lean muscle! One of my passions is helping people find ways to still love what they eat, not have to deprive themselves, yet still maintain their health!   It’s no fun to live your life feeling like you are deprived or on a strict “no you can’t have that!” diet.  Yes, there are things we should avoid at all cost, but eating healthy can still be yummy and I love creating things that you don’t have to feel guilty about eating at all (unless you eat the whole plate, of course)!

We had a party the other night and among all the other food, the Butter Blossoms did not last long!   Next time you go to dinner at a friends house or get signed up to take dessert to your child’s class, offer to bring these!  Adults and kids alike will gobble them up and thank you!

Butter Blossoms

Makes 48 cookies

  • 1 Cup Peanut Butter, Almond Butter, or Seed Butter
  • 2/3 cup raw honey or agave
  • 2 tsp. vanilla
  • 1/2 cup flax meal
  • 2 cups oats (use Gluten Free oats if needed)
  • 1 cup Shaklee 180 Vanilla protein
  • 48 large Dark Chocolate chips

Mix all ingredients into a large mixing bowl. Roll into 1 inch balls. Press down on a plate or cookie sheet until slightly flattened. Press a large, dark chocolate chip into the middle of each cookie. Refrigerate or keep at room temperature.

This takes 5 minutes or less to mix; 5-10 minutes to roll into balls.

  • I can’t have flax seed; do you think almond flour would be a good substitute for the flax meal?

    • Yes almond meal would be fine! Anytime you see a recipe with no eggs but flax meal and water, you’d want to substitute an egg for the Flax meal + water (usually you will see 3 Tbsp flax + 1 Tbsp water = 1 egg). But in this recipe it’s just acting like flour. So substitute away! 🙂
