We have been experimenting around our house with two new ingredients–dates and almonds! I have been very surprised at how many things you can do with these two power-packed foods. I have been grinding almonds in our Vita-Mix to make Almond Flour (also called Almond Meal). I made pancakes this week with almond flour and sweetened with Agave Nectar. They were incredible! Dates have also become a favorite. We’ve made date bars, date shakes, date cookies and the Date Almond Delights!
If you are looking for something sweet to snack on, trying making these! They are absolutely delicious! We made them the other day and they disappeared very quickly. They were a HUGE hit with my kids too! And they are so simple to make.
- 1 1/2 cups almonds
- 1/2 cups walnuts or pecans
- 1 1/2 cup dates
- 1/4 teaspoon almond or vanilla extract ( prefer vanilla)
- 1/2 cup cried cherries (no sugar) or raisins
**Grind 1/2 cup of the almonds into a fine powder and set aside. In a food processor outfitted with an “S” blade (or we use our Vita-Mix–the most amazing blender in the world!), process the remaining almonds and the walnuts until coursely ground. Add the dates and almond/vanilla extract and process until the mixture sticks together. Add the cherries or raisins and pulse to mix.
Form the mixture into tablespoon size balls and roll in the powered almonds. Refrigerate for 1-2 hours to set. Makes 2 dozen. Takes 10 min. Enjoy!
